Ingredients:
● 2 tbsp ghee or coconut oil
● 1 yellow onion, chopped
● 4 celery stalks
● 4 cloves garlic, minced
● 1 large carrot, peeled and chopped
● 1 large chicken breast, chopped into cubes
● 2 red bell peppers, roughly chopped
● 1 tbsp cumin powder
● 1 tbsp chili powder
● 1 tsp oregano
● ½ tsp sea salt
● ½ tsp black pepper
● 1 14 oz can full fat coconut milk
● 3 cups chicken broth
● Optional: 2 tbsp sour cream & chopped green onions
