Who doesn't love dessert for breakfast ! Smoothie Bowls are an amazing way to pack in lots of nutrients, rich flavors and essential vitamins to power up your mornings! An easy and refreshing recipe that features one of our favorite flavors of Ener-C and is loaded with amazing antioxidants, healthy fats, fresh mint and plant based protein!
Vegan Raspberry Mint Smoothie Bowl :
1 frozen banana
1/2 cup frozen Raspberries
1 sachet of Ener-C Raspberry
1 cup of Coconut Milk ( plus more if needed )
1/2 cup of water
2-3 mints leaves
2 tablespoons of Hemp hearts
2 tablespoon of Chia Seeds
2 tablespoons of shredded coconut
1 tablespoon Goji Berries
1 tablespoon slivered almonds
1.) Place frozen fruit ( banana / raspberries ), coconut milk in blender until smooth. If the consistency is too thick, try adding more coconut milk or water until desired consistency.
2.) Add 1-2 packs of Ener-C Raspberry with 1 mint leave and blend .
3.) Pour contents into a bowl . Sprinkle hemp hearts and Chia seeds along the top, with shredded coconut. Place Goji berries and slivered almonds on top.
4.) Fresh mint to garnish - ENJOY
